When given the choice between bitter and sweet, sweet will win hands down. Even if bitter is one of the four basic tastes, it is really not preferred much especially in cuisines. Surprisingly though, bitter is actually healthy thus, it is better.
There are about 20,000 to 50,000 taste buds in out tongue called receptors. The bitter taste actually helps on producing enzymes. It also serves like a warning signal, giving caution to the receptors that the food is toxic.
Now, do not be misguided and associated the bitterness to something toxic and unhealthy because bitter food like vegetables contain certain properties that are very advantageous to the body. One of these properties will be the phytonutrients which is in bitter vegetables that is considered as one of the most powerful antioxidants.
Based from an American journal, most of the antioxidants found in vegetables are generally bitter. These include Glucopyranosides, flavonoids, salicins, and polyphenols and yes, they all have a bitter tang on them. But the bitterness again, is medically beneficialy killing various germs and parasites like ring and tape worms that case diarrhea and other digestive disorders.
It can also help in cleansing the body specifically the liver. It stimulates the appetite and purifies the blood. They are indeed, one of powerful and effective disease-fighting vegetables.
Now, make sure that you understand that not all vegetables are naturally bitter. Say for instance, the vegetable was overcooked; it will lead to having a bitter and undesirable taste. Examples of these veggies are eggplant, broccoli and mustard so always aim for vegetables only being lightly cooked. Overcooking may not only lead to a bitter taste but when cooked too much, may contain sulfur compounds that can give off a very taste. Cook light and select fresh raw vegetables.
By now, you know that you have to take regular intakes of bitter vegetables. Yes, the taste is something discouraging but skimp on these healthy greens is not healthy. Luckily, there are methods that can actually lessen and dull the strong bitter taste. You can either microwave, steam or stir-fry it and add some spices to offset the taste. You can add more powerful flavors using garlic pods and onions. Sautéing it in oil like olive oil and dropping a few drops of lemon, tamarind juice or salt can also make you overlook the bitter foods taste better and actually enjoy the vegetables without realizing that you are actually eating something bitter and healthy.
So try something new and try something bitter for a change and you might realize that it suits your taste preferences. You’re learning something refreshing and at the same time helping your body be healthier.
